Best Kids Lunchbox: Bentgo

I briefly wrote about this in August right after the shoot, but now I can officially announce that the wonderful makers of the Bentgo boxes have finally launched their new product: the Bentgo Kids lunch box.

Moms with kids of any age will appreciate this durable, leak-proof, safe, BPA-free plastic, and easy-to-use children’s lunch box that helps organize and cleverly compartmentalize food in the proper food groups. For the shoot, I helped create 10 different meals – from barbeque chicken sloppy joes to chicken and sundried tomato pasta salad to mac and cheese, including fun sides such as BBQ kale chips and parmesan popcorn. You’ll find many of the recipes in the Bentgo Kids ebook, but here’s an easy one below:

Barbecue Chicken Sloppy Joes

Rotisserie Chicken

1 Tomato, Diced

1 Medium Carrot, Grated

¼ cup Barbecue Sauce

Cilantro or Parsley

Whole Wheat Hamburger Bun

  1. Toss chopped tomatoes and shredded rotisserie chicken and carrots with barbecue sauce and heat through.
  2. Toss the mixture with chopped cilantro or parsley.
  3. Pack with a whole wheat hamburger bun.
  4. Assemble at lunch.
